A Few Surprises This Day (the day before Thanksgiving)
Well, my plans for this day went through the window about an hour and a half ago. It's mostly my fault, though, I admit.
Ugh! I had to step away from this journal entry for a moment as my timer went off, which told me I needed to move laundry to the dryer. When I did that, I stepped on my cat by mistake (poor kitty). Then, I hit my head really hard on a shelf in the laundry room as I pulled out laundry from the dryer. Square in the middle of my forehead and at the front. Ouch. (Serves me right for stepping on kitty.)
I then decided I wanted to try the bread I just baked. I made my own recipe up this morning after I realized Thanksgiving was tomorrow and I am not having to bake a great big old meal, as we are going to a friend's instead. I decided I wanted to spoil my husband, surprise him, and make a nice meal for him today.
I marinated the ribeye, which he will grill when he comes home. (He will have no issue with that. He enjoys it. And I will have the meat marinating all day, so that will make him extra happy.)
Cheesy bread with a tad of garlic sounded good. But I didn't want just a little. I wanted a lot. And I wanted to do keto style since it's better for my hypoglycemia (low blood sugar). All the recipes I've tried are too small or aren't bready enough for me. But I make a really good mug cheesy bread, so I decided to try to come up with a recipe for that, and one that filled the bread pan, not just part of it. I want the bread to last a few days.
And tonight, I will also introduce him to something new. It's something I know he'll like but I know I will get the look that says ,"I-don't-know-about-that." And he'll get the look, "trust-me-I-know-you'll-like-it" from me. I'll make Pumpkin Peanut Butter Soup.
That soup might sound strange. But trust me. It's really good. I had it at a friend's house over a month ago and it's absolutely terrific.
I think it'll be a nice meal and who knows, I might be starting a new Thanksgiving tradition.
So back to the start of the journal entry, I created the cheesy bread recipe and cooked it in the oven and pulled it out a few minutes ago and have already ate too big of a piece. Sigh.
Oh! I have another little tale to share. I was out of town for nine days and gave my husband a honey-do list when I left. I've been back home about a week and hadn't used my oven since. So when I went to pull the bread out of the oven, one of my favorite mitts was missing. I remembered B (my husband) saying he warmed up bread and pizza. Where on earth did he put one mitt and not the other? I looked all over and then found it, by accident, in a place I never would have thought of looking. In his honey-do-home-improvement pile. (Funny!) So I was able to pull the bread out and not hurt myself and somehow managed not to stand on a cat.
And my other cat (the one I didn't step on earlier) is now trying to eat my bread! Uh-no. But, that's saying something. It smells good and tastes good! Thank the Lord! This recipe is a keeper.
So I got the starts of dinner put together and have a new recipe. Score!
Now I need to reclaim and redeem my time and this day. I need to try to stay on track. Hopefully I can do so now.
Ugh. Nope. My dryer just made noise. I need to go tend to that and try not to hurt my head again. Lord, help me.
